Definition: celiac is a digestive disease that damages the small intestine and causes malabsorption of food or nutrients. When a person with celiac consumes gluten, their immune system damages the villi which are responsible for nutrient absorption
Symptoms: symptoms of celiac can vary from severe abdominal pain to basically nothing. the most common symptom in children is diarrhea along with abdominal pain. adults usually do not develop severe symptoms but commonly have abdominal distension
Progression: celiac symptoms can appear to "go away," but often times if a person with celiac stops eating a gluten free diet symptoms can reappear.
Treatment: the only current treatment for celiac is eating a gluten free diet and eliminating foods that are cross-contaminated with gluten. researchers are developing expirimental medicines.

even though many desserts are not regularly gluten free, a lot of them are or can be made gluten free
